Start by cooking the rice per instructions on the box.
Cut chicken into slices and put into a bowl then dice potatoes and onions and put into another bowl.
Pour coconut milk and curry into pan. Stir together over medium heat.
When starting to simmer add in chicken.
After chicken is cooked, add in diced potatoes, onions and water. Bring to a boil and then let simmer.
When potatoes are cooked turn off heat.
Serve in individual serving bowls with a plate of rice. Sprinkle some peanuts on top of the curry.
