Massaman Curry

This Massaman Curry is simple yet full of flavor!

  • 3 Chicken breasts
  • 4 Yellow potatoes medium sized
  • 1 Onion
  • 2 packets Massaman curry
  • 2 cups Coconut milk
  • 2 cups Water
  • 1/2 cup Peanuts crushed or halved
  • 3 cups Rice



  • Start by cooking the rice per instructions on the box.
  • Cut chicken into slices and put into a bowl then dice potatoes and onions and put into another bowl.
  • Pour coconut milk and curry into pan. Stir together over medium heat.
  • When starting to simmer add in chicken.
  • After chicken is cooked, add in diced potatoes, onions and water. Bring to a boil and then let simmer.
  • When potatoes are cooked turn off heat.
  • Serve in individual serving bowls with a plate of rice. Sprinkle some peanuts on top of the curry.


For a vegan option substitute chickpeas for the chicken.
